各类金属元素在钢材结构中的作用：

碳（C,carbon）炼钢时与铁并存的元素，碳含量越高，硬度就越高，*性能就越好。

铬（Cr,chromium）不锈钢中的*腐蚀组成部分，铬含量越高*腐蚀性能就越好，是不锈钢中的强化相。

钼（Mo,molybdenum)具有细化钢微观晶粒从而*细晶强化的作用，*钢的强度，保持硬度。

刀具使用与保养注意事项：

使用斩切刀或骨刀斩骨时，要直上直下，不可左右摇晃。

刀具使用完毕用清水清洗，并用干布抹干刀体、刀根、刀背，并把毛巾裹在刀柄上来回转动。

把刀柄抹干净，然后轻轻套进刀座内。

刀具应放在通风透气、没有酸碱腐蚀的地方。

定期复磨刀具，清除刀具上的污物，油渍，污渍等。*保持每把刀的*佳状态。

用布抹刀时，刃口务*向外，以免意外发生。

刀具锋利，应存放在小孩触摸不到的*地方。
